InDeisgn CS5 allows you to export directly to an interactive PDF, taking advantage of the built in interactivity. Some of these settings you can also access using Acrobat, but its nice that InDesign puts it in a single place and lets you choose it prior to making the PDF file.
- To set initial view in Acrobat, go to File > Properties
- To set page transitions in Acrobat, go to Advanced > Document Processing > Page Transitions
